4th of July Celebration

Independence Day, or the Fourth of July marks the day in 1776 when our founding forefathers signed the Declaration of Independence.  On this day we proudly show off our stars stripes with a lot of noise and festivities.  So spend the day watching your local parade or at a community party and enjoy this simple but tasty meal as a wonderful prelude to a night of fireworks.

4th of July Menu

Lemonade
Watermelon, Honey-Lime Fruit Salad
Sour Cream and Onion Burgers
Spicy Grilled Corn
Marinated Strawberry Shortcakes with Greek Yogurt

Honey Lime Fruit Salad
Makes 8 servings

½ cup Meijer honey
½ cup frozen limeade concentrate, thawed
1 T. poppy seed, if desired
8 cups cup-up fresh fruit
½ cup slivered almonds, toasted

Mix honey, limeade concentrate and poppy seeds in a large bowl.  Carefully toss frit with honey mixture.  Sprinkle with almonds

Fourth of July Idea:  Cut watermelon into 3-to 4-inch wedges, about ½-inch thick.  Place wedges (points facing out) around the edge of a platter, stacking into 3 to 4 layers. Place the fruit salad in the center, and garnish with sprigs of mint.

Sour Cream and Onion Burgers
Makes 8 servings

2 lbs. lean ground beef
1 envelope Meijer dry onion soup mix
1 cup Meijer low fat sour cream
½ cup Meijer dry bread crumbs
1/8 t. pepper
8 whole grain sandwich buns, split
Lettuce and tomato slices, if desired

  1. Heat coals or gas grill.  Mix all ingredients, except bun and lettuce/tomato slices.  Shape mixture into 8 patties, about ½-inch thick.
  2. Cover and grill patties 4 to 6 inches from medium heat 10 to 15 minutes, turning once, until patties are no longer pink in center and juice is clear.  Serve with lettuce and tomato in buns.

Spicy Grilled Corn
Makes 12 servings

1/3 cup butter or margarine, softened
3 T. reduced sodium taco seasoning mix
12 ears of corn with husks

  1. Heat coles or gas grill.  Mix butter and taco seasoning mix.  Carefully pull back husk of each ear of corn; remove silk.  Spread butter mixture over corn.  Pull husks back over ears; tie husks securely with thin piece of husk or string.
  2. Grill corn uncovered 4 to 6 inches from medium heat 20 to 30 minutes, turning frequently, until tender.

Marinated Strawberry Shortcake with Greek Yogurt
Makes 6 servings

Lime-Dusted Strawberries:
1 qt. strawberries, washed well, hulled and sliced
2 T. fresh lime juice
½ cup cranberry juice
1 t. fresh lime zest
2 T. Meijer light brown sugar

Greek Yogurt Topping:
8 oz. plain fat-free Greek yogurt
1 t. Meijer pure vanilla extract
¼ cup Meijer honey

12 slices angel food cake or pound cake, cut into slices 1-inch thick
½ t. Meijer cinnamon
½ cup Meijer chopped walnuts

  1. For the strawberries:  In a medium bowl combine strawberries, lime juice, cranberry juice, lime zest and brown sugar; stir to combine.  Let stand 15 minutes.
  2. For the topping:  In a separate bowl combine yogurt, vanilla and honey.
  3. Place 2 cake slices on each of 6 dessert plates.  Spoon strawberries evenly over cake.  Top with a dollop of yogurt topping.  Sprinkle with cinnamon and walnuts, and serve.

Next Park Party In Wyoming

On Thursday, July 1st we’ll host our second Park Party of the summer at Lamar Park in Wyoming!  It’s a beautiful park and we’re excited to offer an afternoon of free family there!  A few highlights-Craig’s Cruisers will give 5,000 go kart rides away at tomorrow’s event!!!   Goodwill Industries will be collecting gently used items-bring a bag of goodies and we’ll give you an Entertainment Book.   This park also features a super sweet Splash Pad for kids.   Free lunches will be served to anyone 18 and under starting at 11:30 a.m. and the party will begin at noon.

Come out and enjoy an afternoon of FREE Fun!!!

Park Party #2 – Tomorrow!

Park Parties continue as we head to Lamar Park in Wyoming this Thursday for more free fun!  Bring the family out for free food, games, crafts, rides, entertainment, prizes and more.  The party is from Noon-2pm, but free lunches start at 11:30am for kids 18 years and younger.

It’s going to be a good one and I hope you can join us!

Two tips

Two tips that I discovered a while back have really been helpful for me in my own relationships and in my work with individuals and families. Since we’ve started this conversation about communication, it’s timely for me to pass these tips along to you!

Some of the latest information by a leading researcher on relationships suggests that there are two factors that influence the success of conversations in relationships. His research focused on marriages, but these concepts are ones you can also keep in mind when you are communicating with family members and friends. This is how change and growth can happen in your relationships, starting with you.

1.    Soft start up- How do you bring up a concern, a feeling, or a question to others? Do you blindside them with anger? Do you get so frustrated that it leaks out of you at the worst times? Are you sarcastic or critical? If so, a soft start up is something you might want to consider. A soft start up simply means that you bring your requests, needs, desires, and concerns to others in a way that is not full of criticism and blaming, but of respectfulness and honesty. Think—calm, cool, collected.

2.    Allow yourself to be influenced- If we were honest with ourselves, I think most of us would admit that we want to be right most of the time. It’s tough to recognize that we each have a lot to learn, and there are times when we develop an opinion or reach a conclusion without having the full story. To allow yourself to be influenced means to work on our tendency to be defensive in our conversations, to recognize we each have our ‘blind spots.’ This also means that there could be something we could learn from another person’s perspective on the situation—a perspective that might even have the potential to change our own. Try it sometime!

Our friends from Touchstone Energy Cooperative joined us in Cedar Springs to talk to kids about the importance of saving energy and being green!

Cedar Springs Highlights

Yesterday was a great way to kick-off the Park Party season.  We had 4,500 kids and families come out to enjoy a beautiful day at the Cedar Springs Public School Complex.
