A Simple Summer Salad
This past weekend I was reading Self Magazine and came across a yummy recipe I wanted to share. When the weather is warm I love summer salads, plus, for people like me who dread cooking it’s super easy.
Sesame Ginger Chicken Salad
Prep Time: 10 minutes
Cook Time: 45 minutes
Serves: 2 large salads or you could split into four smaller side salads
Ingredients:
2 boneless, skinless chicken breasts
1 bottle of Newman’s Own Lighten Up Low Fat Sesame Ginger Dressing
1 tsp of black pepper
½ tsp of salt
6 cups of mixed greens (romanine, spinach, whatever kind you like best)
½ cup of raspberries (I substituted strawberries)
1 oz. crumbled feta cheese
¼ cup of chopped walnuts
Directions:
1. Preheat oven to 350 degrees F.
2. Place chicken in an oven-safe baking dish. Whisk together dressing and spices and pour over the chicken, turning a couple of times. Dressing should cover the bottom of the baking dish. Bake for 45 minutes.
3. Combine greens, berries, feta, nuts and a small amount of dressing into a large bowl and toss.
4. Once chicken is fully cooked, remove from the over and let rest for three to five minutes. Slice chicken into strips and serve on top of the salad.

I’ve been a part of the WOOD TV8 team since 2005. As Special Projects Producer, I work side by side with Maranda making things happen behind the scenes. I coordinate Maranda’s Park Parties each summer and produce a variety of station broadcasts and events through out the year. I also serve as the producer of Maranda’s weekly half-hour show, Where You Live. I love the variety of my job and getting to be a part of the impact Maranda is making on kids in our community!
Outside of work, I've been married for seven years to my husband John and we have two beautiful daughters, Sophia and Stella. When I'm not busy trying to keep up with the kids, I spend "me time" reading fashion or celebrity magazines, sneaking in some good reality television, walking around Reeds Lake with girlfriends and exploring new restaurants with my hubby.
Inspirations for my blog come from my daily life as a busy working mom -- trying to juggle a full time job and be a full time mom to a spitfire five year old and a new baby.
