Hauntingly Healthy Halloween Treats
Grave Yard Sandwiches
2 slices Meijer whole wheat bread
3 slices deli smoked ham
1 slice 2% cheese slices
Light mayo
Lettuce leaf
Directions: Cover 1 of the bread slices with ham and cheese. Spread with mayo; top with lettuce. Cut sandwich into coffin shape.
Trick-or-Treat Trail Mix
1 cup Meijer pretzel sticks or mini pretzel twists
1 cup reduced-fat cheese crackers
1 cup Meijer lightly salted peanuts
1 cup orange and black dried fruit (raisins, dried apricots or peaches)
1/c cup Halloween candy (optional)
Directions: Combine all ingredients in a big bowl and toss to mix well. Use ½ cup measuring spoon to scoop out servings into goodie bags. Tie the ends closed with orange and black ribbon if desired.
Skeleton and Brain Dip
Lettuce leaves
1 cup light ranch dressing
2 cups assorted cut-up fresh vegetables, such as bell pepper strips, cucumber slices, snow peas, mushroom slices, celery sticks, carrots sticks, cherry tomatoes, broccoli florets, cauliflower florets
Directions: Line small bowl with lettuce leaves; fill with dressing. Place near one end of a large serving platter. Arrange vegetables in a skeleton shape on platter, using the bowl as the head of the skeleton.
Creepy Crawler Pudding Cups
2 cups lowfat milk
1 small package chocolate instant pudding
Reduced fat chocolate cookies
Gummy bugs and worms
Clear plastic cups
Directions: Prepare pudding according to package directions and spoon evenly into 4 plastic cups. Sprinkle crushed chocolate cookies over pudding; add gummy bugs and worms.
I’ve been a part of the WOOD TV8 team since 2005. As Special Projects Producer, I work side by side with Maranda making things happen behind the scenes. I coordinate Maranda’s Park Parties each summer and produce a variety of station broadcasts and events through out the year. I also serve as the producer of Maranda’s weekly half-hour show, Where You Live. I love the variety of my job and getting to be a part of the impact Maranda is making on kids in our community!
Outside of work, I've been married for seven years to my husband John and we have two beautiful daughters, Sophia and Stella. When I'm not busy trying to keep up with the kids, I spend "me time" reading fashion or celebrity magazines, sneaking in some good reality television, walking around Reeds Lake with girlfriends and exploring new restaurants with my hubby.
Inspirations for my blog come from my daily life as a busy working mom -- trying to juggle a full time job and be a full time mom to a spitfire five year old and a new baby.
